Ground sumac has a tangy, citrusy flavour but not much of a scent. Sumac’s distinct flavour is found in za’atar mix and can also be used in fish, chicken and meat rubs, dressing, salads, hummus and as a substitute for lemon. It is commonly used in the Middle East.
