Yellow mustard seeds are milder than the darker mustard seeds variety and less pungent. When they are cooked they provide an earthy aroma and tangy flavour. They are more common in Western dishes due their refined heat. Cooking the seeds in oil intensifies the flavour more than when boiled. They work well in curries, chutneys and sauces.
