Black lime is often sun dried losing all its water content. They are popular in Middle Eastern cuisine. They are used to add sourness to dishes such as soups, stews and fish. In Iraq they are also used in warm tea to aid nausea and indigestion. Black lime has a sour, citrus flavour, with earthy, smoky accents. It lacks the sweetness that fresh lime has.
