Bay leaf is commonly used to flavour soups, stews meat, vegetables and casseroles in Mediterranean and Latin American dishes. Optimum flavour is obtained weeks after picking and drying. They should be removed before serving as the leaf remains stiff after it is cooked. They have a floral, herbal flavour similar to that of thyme and oregano.
